Sweet Potato Brownies

20160224_223131334_iOSSo this has been a craaaaazy month.   Remind me never to go back to school as a grownup again.  Oh right-if I finish this jig I won’t NEED to.  Ha!  If only I knew at 21 or 22 what I wanted to be when I grew up.  Speaking of being a grownup- I had my first mammogram yesterday.  A few years earlier than the recommended age but better safe than sorry.  So-why did NONE of my girlfriends who’ve had this done EVER tell me how much a mammogram SUCKS?  It is a titty twisting, NOT titillating experience that’s really a laboratory lesson on how to make panini sandwiches out of your ta-Ta’s!!!  I had no idea-I seriously thought I’d just go in there topless and wave my arms around for a scanner or something.  Like a machine in a government building that scans for metal.  Boy was I ignorant of what it actually means to proactively take care of my girls! Now-I’m a size C-cup, almost a B.  Not exactly huge but not really itty bitty either.  So I asked the technician-this cute little older lady-what do my A-Cup friends do when they get their pictures taken?  Cause I’ve got a good handful to grab onto and it STILL hurt.  I can only imagine how excruciating it is for women with smaller frames!!!  Anyway.  Enough.  Well I went home and complained to Jim about how much it hurt.  He kindly offered to help make “them” feel better and I told him to back off the boobies!!!  Anyway.  Well anyway.  I haven’t gotten a call back from them so I’m thinking everything was normal.

I made brownies by the way.  YES I said BROWNIES-this TLS devoted chick was fixated on dessert in a big way.  Living a healthy, low-glycemic lifestyle doesn’t mean giving up the things you love.  But it does open up a whole new world of delicious healthy flavors to play with.  And that’s what I did here with these beautiful Sweet Potato Brownies!  Sweet Potatoes are great-compared to other basic foods the sweet potato has so much more fiber content, complex carbohydrates, protein, vitamin A and potassium, and vitamin C!!!  And if you are going to cheat and bake and eat brownies-this is a healthier way to do it than traditional brownies.  And these are grain and dairy free for those who need it, and for those who don’t-well trust me these are yummy.  I can honestly say I’ve never heard of Sweet Potato Brownies before TLS.  But you see I follow this Crossfitter and Paleo Cook chic named Julie Bauer-and I frequently look to her for inspiration.  And boy did I find it.  These babies were SCRUMPTIOUS.  And they were GONE.  In like 5 minutes.  I only had 1 of them!!  Rose, Rusty and Jim ate the rest.   So I’m just going to make more, that’s all there is to it.  End of story.  

Sweet Potato Brownies

Sweet Potato Brownies


  • 1 sweet potato
  • 3 eggs, whisked
  • ¼ cup Extra Virgin Coconut Oil, melted
  • ⅓ cup raw honey
  • ¼ teaspoon vanilla extract
  • 3 tablespoons Coconut Flour
  • 2 tablespoons unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon cinnamon
  • pinch of salt
  • ½ cup [Enjoy Life Chocolate Chips *** http://www.shop.com/search/enjoy+life+chocolate+chips]


  1. Time to bake that sweet potato. Preheat your oven to 425 degrees, use a fork to puncture holes all around it, then throw in the oven for 25-30 minutes. Or just microwave-but that's not as fun. Just easier.
  2. Once your sweet potato is soft and cooked through, peel off the skin and mash it up in a bowl. And turn your oven down to 350 degrees.
  3. Now add your wet ingredients: eggs, coconut oil, honey, and vanilla to the bowl and mix together.
  4. Then add your dry ingredients: coconut flour, cocoa powder, baking powder, cinnamon, salt and chocolate chips.
  5. Mix well to incorporate all that goodness.
  6. Pour into an 8x8 glass baking dish lined with parchment paper.
  7. Bake for 30-35 minutes.
  8. Let rest to cool a bit.
  9. Lift out of the baking pan-that's the great thing about using parchment paper. It's optional though, you can also grease with coconut oil or evoo.
  10. Eat those b*tches before everyone else does-like what happened in my house!
