Smoky Veggie Egg Muffins for On-the-Go Goodness

20160210_141554761_iOSPeeps, the last two weeks have been a shit show!  Seriously.
I know I’m not alone in saying that sometimes eating healthy and properly can be a challenge when faced with a daunting schedule of activities.  I mean, seriously I’m supposed to get up at 5:30am for 6
am Crossfit, get 3 kids off to 3 different schools, go to 3 different college classes, pick up 3 kids from 3 different places (at the same time for 2 of them), cart around to more evening activities for all 3 kids (ok sometimes I have my own activities, I like the flexibility class and the hot vinyasa yoga at Backbone Yoga), help with homework, go to skiing, wrestling, cheerleading events AND fun Superbowl parties AND get through 2 of my kids birthdays (we don’t half ass their birthday treat wishes) and somehow find time to PREPARE MULTIPLE HEALTHY MEALS WITH 3-5 CUPS OF VEGGIES WITH EACH MEAL?  Well-truthfully  it IS daunting but there are things that can be done to ensure that healthy choices are readily available.
I do usually manage to cook up a hearty vegetable and egg stir fry and those are yummy and sail me through the first part of my morning.  The thing is-I learned some hard lessons the past couple weeks-one of which is that I need something available to me that can be grabbed quickly and taken on the go!!!   This morning, I made Veggie Egg Muffins again!  I’ve previously posted a spicier version of these with Bob’s XXX Hot Sauce but the great thing about eggs and veggies is that they are sooo versatile and anything can be done with them!  I guess I’m posting another version because they ARE so pretty, the combo of veggies is slightly different and so are the spices that I used.  Plus this time, I made them because I know that later on this week I’m going to need some time management help not for breakfast but for LUNCH, SNACK AND DINNER!  It’s the lesson learned here.  These are a great on-the-go food to have on the way to skiing, wrestling, cheerleading, or even on the way to class after dropping off the kids when they’ve missed the bus AGAIN.
Don’t have kids and sick of hearing me talk about how great these muffins are for in-between taxi activities?  Ok.  They are great for ANYONE that just wants to eat healthy without having to spend time cooking each and every meal or wants to grab something besides yet another protein bar or celery stick.  I can’t stress enough how versatile these egg recipes are.  Don’t like mushrooms?  Put something else in or leave them out.  These are SO EASY and they are DELISH.  Enjoy!!!

Smoky Veggie Egg Muffins for On-the-Go Goodness


  • 1 carton of egg whites
  • 1 entire 5 oz container of organic fresh spinach
  • 2 bell peppers peppers cored and diced
  • 1 onion diced
  • 1 8 oz container of organic sliced mushrooms
  • 1 large organic tomato, diced
  • 1 teaspoon chili powder (feel free to use more or less)
  • 1 teaspoon cumin (feel free to use more or less)
  • Salt/Pepper to taste
  • 2 tablespoons Coconut Oil
  • Coconut or Avocado Spray
  • 2 Muffin Tins
  • Preheated 350 degree oven


  1. Melt Coconut Oil in pan at medium heat.
  2. Add onion and peppers and a little bit of kosher salt, and saute until softened, about 5 minutes or so.
  3. Add in mushrooms, let them saute another 2-3 minutes
  4. Add in spinach, continue to saute an additional 2-3 minutes until spinach is wilted and mushrooms are cooked
  5. Remove from heat and add veggies to a large bowl using a slotted spoon so that the excess moisture is left behind
  6. Add in the egg whites and spices
  7. Add in the diced tomatoes. ( I don’t cook these with the other veggies because I don’t want them soggy going into the oven)
  8. Stir until ingredients are well combined. Add in salt/pepper to taste
  9. Distribute the mixture between the muffin cups. Using an entire carton of egg whites should use up 1 full muffin tin + half of the 2nd
  10. Bake at 350. Check it for firmness after 25 minutes but at 350, chances are you’ll need to go for a full 30 minutes. This morning I needed to go for 35 minutes before I was satisfied with doneness.
  11. Serve and enjoy!
