XXX Veggie Egg White Muffins

20151217_203407030_iOSWe frequently go through 1-2 jars of good quality organic salsa and or a really good hot sauce each week so when one of Jim’s colleagues-Bob Holland-gave him a jar of homemade spicy hot sauce as a Christmas gift we both were pretty psyched!  Hot Sauce is such an easy way to flavor up eggs, chicken dishes, spoon on some salads and spice up some veggies!  By the way our family goes through a LOT of veggies and eggs.  So I’m always looking at all kinds of ways to flavor them because otherwise life in the kitchen would just be flat out boring, especially at breakfast.  Anyway along came this jar of pretty orange salsa marked XXX on top.  I guess that’s meant to be a warning to all innocent onlookers to not stick a spoonful of it into their mouths?  The jar was pretty tough to get open too-it was the vacuum seal that meant business!  Well guess what I did-despite the triple x warning on the lid?  I stuck a spoonful of it in my mouth.  Cause I’m such a tough girl.  When fire finally stopped leaping from my eyes, ears, nose, and mouth then and only then I no longer thought I was going to die.  This is not a condiment you’d serve to kids with a bowl of tostitos scoops-or cry babies or anyone delicate for that matter!  Jim was working away in his office and being the good chick I am, I thought he really needed some nourishment to get him through the last hour.    So I served him some of it in a little bowl with some celery and carrot sticks and then walk away.  I giggled at the “whooa” that came out of his office 2 minutes later.  It was a pretty darn good salsa!   So…now that my curiosity was satisfied and I opened and tasted Jim’s gift, what were we going to do with it?  Well, we were going to EAT it!  It has a smooth rather than chunky consistency (Chunky is preferred for scooping and shoveling) and is perfect for some recipes that I already wanted to dress up.  So I mentioned previously we go through a lot of veggies and eggs in our house.  I do different things with them to keep things interesting and egg white muffins have made an appearance in my kitchen a few times as of late.  They are such an easy, on-the-go breakfast or snack and are packed with the protein and nutrients you need to take you through to the next meal or that workout.  Here is one version that I’ve kicked up with Bob’s XXX.  By the way the peppers can be substituted for anything you have available in your fridge (Once I only had zucchini and tomatoes) and since the XXX Hot Sauce is only provided in limited quantities and by Bob-feel free to substitute your own personal favorite.

Ingredients:

  1. 12 Egg Whites
  2. 1 cup chopped fresh spinach
  3. 2 red peppers cored and diced
  4. 2 orange peppers cored and diced
  5. 2 green peppers cored and diced
  6. 1 red onion diced
  7. 1 tablespoon of Bob’s XXX Hot Sauce (Or your own substitution)
  8. Salt/Pepper to taste
  9. 2 tablespoons Ghee
  10. Coconut or Avocado Spray
  11. Muffin Tin
  12. Preheated 350 degree oven

Instructions

  1.  Melt Ghee in pan at medium heat.
  2. Add veggies and a little bit of kosher salt, and saute until softened, about 5 minutes or so.
  3. Remove from heat and add veggies to a large bowl, scraping the ghee as well with a spatula
  4. Add in the egg whites and a tablespoon of Bob’s XXX Hot Sauce and stir until ingredients are well combined.  Add in salt/pepper to taste but with the XXX ingredient trust me it isn’t all that necessary
  5. Distribute the mixture between all 12 cups of the muffin tins
  6. Bake at 350.  Check it for firmness after 25 minutes but at 350, chances are you’ll need to go for a full 30 minutes.
  7. Serve and enjoy.
