Pumpkin and Apple Egg White Pancakes

20151201_130659035_iOSThis recipe was an accident, but a fabulous creation nonetheless and I will make this again!  Egg white pancakes with delicious pumpkin pie and apple goodness blended with nutrition shake!  This is great for ANY menu plan.

So by the way did anyone find any kitchen inspiration over the Thanksgiving break?  I did.  Jim and I went to a close friend’s house after we had Thanksgiving dinner with my family.  They were having a Friends-giving and I had a piece of this really delicious pumpkin pudding pie that was not incredibly healthy, and certainly not TLS approved.  The baker-a really nice lady said it was weight watchers approved….but unfortunately there was nothing low-glycemic about it which doesn’t do my menu plan any good.  But I loved it nonetheless and I was thinking of all the ways I could make a low-glycemic version of the same thing that could be enjoyed without any guilt whatsoever.  One of my thoughts was to make a meringue sweetened with protein powder to put on top of the pie instead of the cool whip that the original not so healthy version sported.  I tried, but it turns out you shouldn’t add nutrition shake powder in egg whites.  Not before you start to beat them and not after they’ve been beaten to peaks either.  Craaaaap!!!!  So what do you do with a bowl of 16 egg whites (two attempts at nutrition shake meringue) beaten with a serving of nutrition shake, a teaspoon of pumpkin spice, and ½ teaspoon of organic vanilla extract?  You save it for the next day’s protein packed power breakfast!   Or brunch if you so choose, these would pair beautifully with a mimosa.  You are getting the best of the best with this-egg whites, pumpkin, apples and nutrition shake, which has 18 grams of protein and 10 grams of the best and only clinically tested fiber on the market!    Here you go, and enjoy!

Ingredients

8 egg whites (egg beaters are perfectly fine)

Pinch of salt

½ teaspoon of organic pumpkin spice (or make your own, if you desire to)

1 apple, peeled and finely chopped (really, really small)

1 sliver of leftover pumpkin pie filling OR 2 tablespoons of canned pumpkin

1/2 teaspoon vanilla extract

2 scoops TLS Vanilla Nutrition Shake

2 tablespoons ghee or coconut oil

Instructions

Over medium heat, melt the ghee or coconut oil.

Mix all ingredients together

Pour into pan ¼ cup at a time.

Flip when the pancake is no longer runny

Eat up!
